Bubba's  Delicious Green Waffles

The hubs and I celebrated St. Pat’s last week with a little Irish Breakfast. And while I won’t share some of the goodies with you because they won’t be relevant until next year, I will share one snack that I’m looking to incorporate into year round entertaining – Irish Pudding Shots!

I’ve wrote about my love for pudding shots last year, but these ones  were delish. They were so easy to make and tasted more like a Frosty than a chilled Irish coffee.

I copied this recipe from PuddingShot.com – I wish this little blog would update itself more!

Irish Pudding Shots (Or you could probably call them Frosty Shots)
·         1 small package of Instant Chocolate Pudding
·         3/4 cup of Milk
·         1/4 cup of Vodka
·         1/2 cup of Irish cream (Baileys)
·         8 oz of Extra Creamy Cool Whip (I just used regular)

While the Cool Whip was defrosting a bit, I mixed all ingredients into my electric mixer and then folded in the whip. Once the mixture formed a liquid, I scooped it out into mini plastic shot cups (with lids) and then froze.

These suckers really get hard (that’s what she said), so you may need to defrost them a bit before serving – or give people a spoon!
